spiced mackerel fishcakes


2 x 200g packs Thai-Inspired Smoked Mackerel Strips
425g pack Maris Piper Mashed Potatoes
50g Natural Breadcrumbs
60g breadcrumbs
olive oil

Preheat the oven to gas 6, 200°C, fan 180°C.

Flake the Thai-Inspired Smoked Mackerel Strips into a large bowl, discarding the skin. Microwave the Mashed Potatoes to pack instructions.

Add the mash to the mackerel with 50g breadcrumbs; stir to combine.

Shape into 8 cakes, 2cm thick, then use 60g breadcrumbs to coat.

Brush with olive oil, transfer to a lined baking tray and bake for 25-30 mins, turning halfway.
