pea soup with gorgonzola dolce and ham hock

1 litre fresh chicken stock
650g frozen peas
50g gorgonzola dolce plus extra to decorate
Lemon juice (if using)
Shredded ham hock
Crusty bread to serve

Heat the stock in a pan then add the peas and simmer for 5 mins. Season then stir in the 50g gorgonzola dolce and allow to cool.

Whiz to a smooth soup with a stick blender. Heat through, taste and adjust seasoning – you may want to add some lemon juice.

Garnish with a handful of the ham hock and a little more gorgonzola dolce. Serve with plenty of crusty bread on the side.
