mango julep
 

serves 2, prep 5 mins

1 juicy ripe mango, peeled and chopped into small chunks
10 mint leaves, torn plus a sprig to garnish
70ml bourbon whiskey
2 tsp sugar
2 generous handfuls of crushed ice

1. Reserving 10 small chunks, blend the rest of the mango into a perfectly smooth purée.

2. Divide the mint, whiskey and sugar between 2 deep glasses and mix.

3. Tip half the mango into each cup and fill to the top with crushed ice.

4. Garnish with the reserved mango chunks and a mint sprig then serve.
