Bursting with flavour, this no-mayo salad makes the most of nutty-tasting seasonal Jersey Royals

serves 6, ready in 40 mins

750g Jersey Royals
200g frozen peas
½ onion, thinly sliced
4 rashers smoked streaky bacon, chopped
1tbsp chopped parsley
2tsp rapeseed oil

Put the Jersey Royals in a pan of cold water. Bring to the boil and simmer for 20 mins until tender.

Add the frozen peas and cook for 2 mins. Drain well.

Meanwhile, heat the oil in a large frying pan. Cook the onion until softened.

Add the bacon and cook for 10 mins, or until crisp.

Mix the potatoes and peas with the onion and bacon.

Sprinkle over the parsley. Season with black pepper and serve warm.
