DIY oatcakes

makes about 12,  takes 30-35 minutes

150g porridge oats
50g plain flour
½ tsp bicarbonate of soda
50g butter

Heat the oven to 170C (190C non-fan). Pulse 75g of the porridge oats in a blender until it looks like a coarse flour. Mix with the remaining oats, the flour, bicarbonate of soda and l tsp salt.

Use your fingertips to rub in the butter, until it looks like large breadcrumbs. Add 50ml hot water and mix into a thick dough.

Generously dust a work surface with plain flour, roll out the dough and cut into triangles, or use a biscuit cutter for round shapes. Transfer to a baking tray, and cook for 20-25 minutes, until they start turning golden brown round the edges.
