crispy potato beef casserole

So simple with ready-prepped fresh veg

serves 6, ready in 2 hrs 15 mins

450g pack Butcher's Selection Beef Stewing Steak, trimmed of fat and cut into small chunks
2tbsp plain flour
600g bag Asda Casserole Vegetables
500ml hot stock made with 1 reduced-salt beef stock cube
300g pack Asda Crispy Potato Slices

2tsp rapeseed oil

Preheat the oven to 180C/160C Fan/Gas 4.

Coat the chunks of steak in the flour. Heat the rapeseed oil in a large frying pan, brown the steak in batches and transfer to a casserole dish.

Fry the vegetables in the same frying pan to colour. Stir into the casserole dish with the hot beef stock. Cook, uncovered, in the oven for 1 hr 30 mins.

Top the casserole with the potato slices and return to the oven for 30 mins, or until the potato has browned.
