corned beef hash

This tasty supper dish can be made by layering sliced potatoes, corned beef and onions in an ovenproof dish then pour some Oxo Beef stock over and bake in a moderate oven for about an hour.

serves 4

4 large potatoes, peeled and cut into thin slices
1 can corned beef, cut into cubes
1 onion, sliced
Oxo Beef Cube, made up to 500ml with hot water

Preheat the oven to 190ºC/375°F/ Gas 5.

Layer the potatoes, corned beef and onions in a lightly greased ovenproof dish ending with a layer of potatoes.

Pour over the hot stock and cover the dish with a lid or foil and cook for 45 minutes to an hour until the potatoes are cooked through.

hints and tips:
Try adding a can of chopped tomatoes instead of the water for a lovely rich flavour.
