Seen all over Instagram, these puffed-up breakfast beauties are so simple to make.

Preheat the oven to 230C/210C Fan/Gas 9. Take an egg and separate the white and yolk.

Whisk the white into stiff peaks and add extras such as Parmesan, chives or ham.

Spoon the egg whites onto a baking tray lined with baking paper, make a little `nest' for the yolk and bake for 2 mins.

Remove from the oven, add the yolk, season and bake for 3 mins until the whites turn golden.

Serve immediately.
