classic custard

serves 4, prep 10 mins, cook 15 mins, easy, v

500ml whole milk
4 egg yolks
75g sugar
3 tbsp cornflour
seeds from 1 vanilla pod

Bring the milk to the boil in a saucepan then take it off the heat. In a large bowl, beat together the egg yolks, sugar, cornflour and the seeds from the vanilla pod. Slowly pour the hot milk onto the egg yolk mixture, whisking all the time. Pour everything back into the saucepan and cook for 8-10 mins, stirring all the time until the mixture is thick and smooth.
