bill’s famous scrambled eggs

per person

2 eggs
60ml single cream
Pinch of sea salt and black pepper
10g butter

1 Place the eggs, cream and salt and pepper in a bowl and whisk together.

2 Melt the butter in a nonstick frying pan, taking care not to burn the butter. Pour in the egg mixture and cook for 20 seconds or until gently set around the edge. Stir with a wooden spoon, gently bringing the egg mixture on the outside of the pan to the centre. The idea is to fold the eggs rather than to scramble. Leave to cook for a further 20 seconds and fold again. When the eggs are just set, transfer them to a plate. They will continue to cook when off the heat.
