bay scented italian rice pudding
using a 2 portion slow cooker

serves 2-3

75g/3oz risotto rice or short grain pudding rice
850ml/1½ pints full cream milk
75g/3oz caster sugar
Large knob of butter 1-2 bay leaves

Bring the rice and milk to the boil in a small saucepan, then stir in the remaining ingredients. Pour carefully into the slow cooker, cover and cook for 3½ - 4 hours on Low

Cook's Tip: Serve with freshly stewed fruit, jam or lemon curd.
