4 eggs, beaten
225g caster sugar, plus a little extra for dusting
225g self-raising flour
2 tsp baking powder
225g butter at room temperature, plus a little extra to grease the tins
Jam and icing sugar, to serve

1 Place all the ingredients except the jam and icing sugar in a large bowl and beat together with a wooden spoon or electric whisk, or do it in a stand mixer, until you have a smooth batter that drops off a spoon when it is tapped sharply against the edge of the bowl (you may need to add a tablespoon or two of milk to achieve the right consistency).

2 Line two 20cm tins with baking paper. Divide the batter evenly between both and bake at 180C/gas 4 on the middle shelf for 20-25 min. They should be springy to the touch and coming away from the sides slightly when ready.

3 Turn out on to cooling racks. Sandwich together with jam and dust with icing sugar before serving.
